Yakhni Pullao Masala
Ingredient
“Salt, Fennel, Coriander, Red Chilli, Big Cardamom, Ginger, Garlic, Cumin, Green Cardamom, Cinnamon, Black Pepper, Clove, Carom, caraway , Bay Leaves”
Serving Suggestion
“Serve with raita and fresh salad, shami kabab and green chutney. Garnish with slightly roasted pine nuts and fried onions. Serving for 5 – 6 people. (1 packet 50g)”
Preparation Time
50 minutes for chicken, 11/2 – 2 hours for beef/mutton
STEPS OF COOKING
- In a pan, add 3 – 4 glasses of water, meat, 1 tsp Mehran Ginger, Garlic Paste and Mehran Yakhni Pullao Masala. Cover and cook on medium heat until meat becomes tender (For Beef/Mutton add 6 – 7 glasses of water).
- When 3 glasses of stock remains, strain the stock and keep meat and spices aside.
- Heat oil/ghee, fry onions until they become golden. Take out half quantity of onions and keep aside.
- . In the same oil/ghee and onion add remaining Mehran Ginger, Garlic Paste and meat, fry for 2 – 3 minutes. Add yogurt, stir continuously and cook for 5 minutes. Then add stock, boil on high heat and add soaked rice. Cover and cook on medium heat. When water is reduced, cook on low heat for 15 minutes. When rice is cooked, spread the onion. Mix well and remove.
